Making the sourdough by Hand with Vitam

Keep 25 grams of flour aside to use as your floured surface whilst kneading

  • Put ingredients in order as listed in recipe into mixing bowl.
  • Mix it in Dough Mixer
  • Knead on a floured surface for about 10 min or until smooth and elastic
  • Place dough into bowl again, cover it and allow to stand in a warm place (to double in size)
  • Knock back, then knead again until smooth for about 5 min
  • Shape and place in a prepared tin
  • Preheat the oven to 250°C, place bowl of hot water on the bottom rung to add humidity to the oven
  • Bake at 250°C for 10 min and then at 200°C for another 20 min

Making the sourdough a Bread Maker

  • Put ingredients in order as listed in recipe into bread pan.
  • Select the ‘Wholemeal’ setting and select the crust.
  • Press Start.
  • If the dough is not evenly spread in the bread maker after the first kneading, you should extend the resting phase until larger gas bubbles continue to loosen the dough and the tension diminishes. Not applicable for fixed program Bread Makers.
